The Pesto Manifesto



This is no joke my fave recipe.

So I’m Italian, well duh... But I’m 100% and I’ve been cooking since I was 3 (if you count peeling garlic cooking). Cooking is no joke in my house; the kitchen is not only where we eat but talk, online shop, gossip, drink coffee {I think you get the point}. Growing up one of my favorite dishes was pesto with bow ties, but now that I’m in my twenties pasta doesn’t really sit well in my hips…if ya know what I mean. So I substitute pasta with pretty much everything else, which is why you’re going to LOVE this recipe. I’ll give you the tools to create endless meals with this magic sauce.

Oh man if my mom knew I was giving this out she’d kill me… good thing she’s so old school & doesn’t even know what a blog means…

But of course, I healthifed it.

Ingredients:
     
  • 1 bunch fresh basil
  • 1/4 cup of cashews (any nuts would really do)
  • 1 avocado, pitted and peeled
  • 1 clove of garlic
  • ½ cup olive oil
  • a pinch of salt & pepper
  • 1 cup of spinach (kale also works as a great alternative)
  • STEP1: Place all ingredients into food processor (a blender also works)
  • STEP2: Blend blend blend!
  • STEP3: Enjoy! (Can use fresh or hot)

*For freshness: store any extra sauce in the freezer *
