Open faced tartines

I mean I can't begin to tell you how indecisive I’ve been lately... food, guys, shoes, hair {the list can literally go on & on}. Am I alone here?

Well fortunately variety is the spice of life, literally. Why stick to one thing when you can have it all (within reason people!). If you’ve ever been out to dinner with me, you know that I am the GO_TO tapas person.  Small plates are your friend. I love being able to taste a variety options without getting full off of one meal, plus its much more fun that way!

Although options are always ideal, it can be super hard to satisfy all those cravings with  a limited supply of ingredients in your mini apartment kitchen. So I stick to the basics. Just this week I came back from the gym and had ZERO idea what I wanted to eat for breakfast, shocker I know. On weekends I usually stick to a veggie egg-white omelet but I was not into it for some reason.

I usually always have Ezekiel bread, quinoa crackers or rice cakes in my cabinet. It’s always good to have a healthy ‘carb’ option. Try to replace all white wheat carbs OUT of the kitchen, it will eliminate the temptation. Long shelf life items like nut butter should always be in your cabinet. I always keep healthy “toppings” around. They can literally be put on anything [salads, Greek yogurt, tartines]. Start with the basics chia seeds, coconut chips, flax seeds & nuts. I promise you can’t go wrong. Sometimes it’s hard to hit the grocery store each week but you’re a liar if you tell me you can’t pick up an avocado or banana within walking distance (now your thinking about the little deli across the street from you, told ya) !

So this is where is gets fun. The rules are there are no rules. It can be sweet, savory, spicy, nutty... whatever your heart desires.

I’d love to hear your fave creations, please share! Here are a few of mine. I will continue to add new pictures for creative inspiration.

My absolute go to is avo-toast with a sunny side up egg, YUMMMMMM. Don’t forget the fresh red pepper flakes and fresh lemon or limejuice!

I also have a serious peanut butter addiction, like bad. So nothing goes better with PB then a perfectly riped banana. I always add chia seeds for a little crunch plus they make you super full!

If you have peanut butter then I’m sure you have jelly or jam. Sometimes a little jam does the trick and cures that sweet tooth. Add some crunchy toppings for texture and wa-la !

enjoy!
