What the Guac? This is Eggcellent!



This recipe is as easy as boiling an egg… literally.

So it’s as simply as this …

This modified version of deviled eggs is double the flavor minus the fat (NO MAYO-like ever!)

It makes the best snack, appetizer or side dish. Never know what to bring to a party? Always feeling guilty munching on carbs & fried food before the heavy meal you’re about to eat? Well, the best thing about bringing a dish to a party is that you get to eat what you bring, so why not make it healthy- plus who doesn’t love guac!? No need to worry about dietary restrictions because these beauties are vegetarian, gluten-free, low-carb & paleo. 


Ingredients:
  • 6 large eggs, hard boiled
  • 1 medium avocado
  • ½ a bell pepper (I used yellow for a pop of color)
  • 2 tsp fresh lime juice
  • 10 grape tomatoes
  • 1 small garlic clove
  • 2 tsp red onion, minced
  • 1 tbsp minced jalapeno
  • a pinch of salt and fresh ground pepper






1. Bring the eggs to a boil  (hint: Place the eggs in a pan whiling using medium heat & bring the water to a boil. Once boiling shut the flame off and cover for 20 minutes. Rinse under cold water to cool down).Once cooled peel the hard-boiled eggs and leave them in the refrigerator.

2. Cut the eggs in half (horizontally), I toss the yolks.

3. Dice up the bell pepper, red onion, garlic and the grape tomatoes.

4 Scoop out the avocado and mash it into a bowl. Mix in lime juice, red onion, garlic, bell peppers, tomatoes, salt and pepper.

5. Scoop generous amounts of guac into the halved eggs.
